Charles Phan’s Pho Ga Noodle Soup with Springfield Chicken

Asian food is well known for it's strong, rich flavours, often with a chilli kick. You can experience this yourself, and what better way to combine your meal than with our tender organic chicken from our Herefordshire countryside. This Chicken Noodle Soup will most definitely be a crowd-pleaser. Serves 6


  • 1.35kg whole organic or free-range chicken
  • 6 whole spring onions
  • 1 thumb-sized piece ginger, crushed
  • 1 tbsp sea salt
  • 3 litres chicken stock
  • Fish sauce, for seasoning
  • 450g packet of dried rice vermicelli , cooked according to packet instructions
  • 1 bunch spring onions , trimmed and thinly sliced
  • 1 bunch coriander, chopped
  • Crispy fried shallots (see below)
