Chicken and Chorizo Pasta Bake
This one pot supper is a great midweek meal. Using our Organic Diced Chicken Leg it's also great value!
Ingredients:
500g Diced Organic Chicken Leg
One Small white onion diced
2 Cloves Garlic Crushed
Half a spicy chorizo ring sliced in 1 cm slices
A tin of good chopped tomatoes
150g Mascarpone
500g Fusilli or Penne Pasta
1/4 Tsp Chilli Flakes
1 Tsp Smoked Paprika
250g Mozzarella
Method:
- Place the chicken in a microwavable bowl, cover with water, spread cling film over the bowl and pierce in places. Cook for 10 minutes in the microwave.
- Fry the onion until translucent add the garlic and sliced chorizo, cook until the chorizo is releasing its red oil.
- Add the tomatoes chilli and paprika and simmer for 10 minutes
- Boil the pasta for 10 minute and drain.
- Get a large ovenproof dish and put the pasta and sauce into the dish. Stir in the mascarpone and scatter torn mozzarella over the top.
- Preheat the oven to 180 fan or gas mark 6,
- Place in the oven for 35-40 minutes or until browned and serve.
