Organic Turkey San Choy Bow
Here's our recipe for a quick midweek supper that is both full to the brim with flavour and healthy at the same time!
Ingredients (Serves 3-4):
1 Large Carrot Thinly Sliced in 1 inch Strips
1 Medium Onion Thinly Sliced
100g Mushrooms Sliced (Chinese Straw Mushrooms if You Can Get Them)
1 Red Chilli (Optional) Finely Chopped
2 Cloves of Garlic (Crushed)
1 Inch of Ginger Grated (or Use Lazy Ginger)
400g Bean Sprouts
100 Ml Oyster Sauce
4 Tbsp Light Soy Sauce
2 Tbsp Ground Nut Oil
1 Tbsp Sesame Oil
1 Crispy Lettuce
Hoi Sin Sauce as Relish
Using a wok or large frying pan, pour in the sesame and ground nut oil over a high heat.
Once hot first fry the onions, garlic, ginger, carrot and chilli for 1 minute (you can add any other veg such as strips of courgette or baby sweetcorn as well). Then add the turkey mince and break up stirring constantly until the mince is browning.
Once the turkey looks cooked add the oyster sauce and soy sauce and the bean sprouts, stir and reduce the heat to medium.
Cook on a medium heat for 4-5 minutes adding some slaked cornflour if you like your sauce thicker or some water if you like it runnier!
Transfer the mix to a warmed serving dish and serve alongside the lettuce leaves to use as a wrap. Add hoi sin as a sauce if you like things sweetened up!
