Cranberry & Rosemary Free Range Chicken Sausage

Boxing Day Bubble and Squeak

Whip up a deliciously quick Boxing Day treat for your guests to carry on the Christmas flavour with our Boxing Day Bubble and Squeak recipe. Serves 4


  • 400g cold leftover potatoes
  • 400g cold leftover mixed vegetables eg. brussel sprouts, red cabbage, carrots, chopped
  • Butter
  • Pinch of Salt and pepper
  • Springfield Cranberry and Rosemary Sausages


  • 1. Preheat your oven to 190 degrees C. Grease a baking dish with a little butter.
    2. Mix and lightly mash the potato and vegetables together and season well.
    3. Tip the mixture into the baking dish (we like to leave it loose-textured, so don’t compact it too much), dot with butter. Bake for 20 minutes until golden brown on top. Garnish with fresh cranberries and rosemary. Serve with Springfield cranberry and rosemary sausages, and onion gravy.
