Jamie Oliver's Christmas Roast Duck with Port Gravy
An amazing alternative to Turkey for Christmas day. Jamie's roast duck with crispy potatoes and port gravy is putting up a very strong case for why it should be the centerpiece for our tables this Christmas! It's made even better by the fact that it's so easy - duck doesn't dry as quickly as chicken or turkey and it'll take about 2/3 hours in the oven.

Ingredients
- 1 x 2kg Free Range Whole Duck
- 2 Sprigs fresh Rosemary
- 1 Nutmeg
- Salt & Pepper
- 1 Orange or Blood Orange
- 4 Cloves of Garlic
- 1 Large Red Onion
- 1 Celery stalk
- 2 Carrots
- 2 cm piece of Ginger
- 1/2 stick Cinnamon
- 2 Bay leaves
- 1kg Maris Piper Potatoes
- 500ml Water or Chicken Stock
- 1 tablespoon plain flour
- 100ml Port (+ 1 glass for the chef)
