Chicken Sausage Toad in the Hole
Here's our way of cooking Toad (Hen!) in the Hole with a twist!
Ingredients:
500g Free Range Springfield Chicken Sausages
300ml Milk
100g Plain Flour
2 Free Range Eggs
Pinch of Salt
2 Tbsp Wholegrain Mustard
75g lard
Method:
Heat the oven to gas Mark 6/7 or 180 fan, take a roasting dish or tin approximately 20cmx30cm and put 25g of the lard in it. Put the sausages in the dish and place in the oven for 10 minutes. Whilst they are in the oven prepare your batter by blending the eggs, flour, milk and mustard and a pinch of salt. Then add the remaining lard and turn the oven up to 220 Fan or gas mark 8/9. Once the fat is really hot pour the batter mixture over the sausages and return to the oven for 15-20 minutes or until the Yorkshire Pudding has risen and is browned. Serve with onion gravy and vegetables
