The scrag end — a traditional cut from the neck — combines meat and bone for a depth of flavour that transforms broths, soups, and slow-cooked stews. And our lamb belly is not to be missed: rolled and stuffed with mint and parsley, then cooked low and slow until it’s meltingly tender.
However you choose to cook it, our lamb reflects the care and respect that come from raising animals naturally on healthy pasture — food crafted with integrity, from field to fork.
About Our Lamb
Our sheep graze exclusively on organic pasture as part of the farm’s rotational grazing philosophy. They are also 100% grass fed, a combination of this and their breed means that they grow slower than your average sheep. This produces a high-quality lamb with exceptional texture and flavour.

Haye Farm is farmed to strict Organic Farmers & Growers (OF&G) standards. We use a local, small-scale abattoir and the meat is butchered on-site in our SALSA approved facility.
