Mediterranean BBQ Chicken Thighs

This delicious dish is all about the marinade. This recipe utilises the juicy cut of chicken thighs but you can use the marinade on any cut - drumsticks, legs or chicken portions.

This is for our four pack of thighs - just multiply the amounts for larger numbers.

Ingredients:

600g Springfield Organic Chicken Thighs

Juice and rind of 1 Lemon

Handful of Finely Chopped fresh Rosemary and Thyme

4 Tbsp Olive Oil

2 Cloves of Crushed Garlic 

 

Method:

Simply combine the ingredients in a mixing bowl slashing the skin of the thighs to allow the marinade to penetrate. Cover and refrigerate for 2 hours prior to cooking.

Cook on the grill or BBQ - if you want to ensure they are cooked through thoroughly, place in a 180 fan oven for 10 minutes after they turn golden brown.

Season to taste and serve with a couscous or potato salad....
