Coppa
Coppa is a proper, traditional cured meat made from pork neck — full of flavour, gently spiced, and slow air dried the old way.
We take carefully selected organic pork and cure it with a simple mix of spices, then leave it to mature slowly so the flavour can develop naturally. Nothing rushed, nothing overworked — just time doing its job.
Made by hand at The Organic Cure here at Haye Farm in East Devon, using high-welfare pigs raised outdoors on organic pasture. It’s honest charcuterie, made with care and respect for the animal and the land.
Silky, savoury, and gently spiced — best served simply, sliced thin, and enjoyed at room temperature.
