A proper, traditional cured cut made from organic pork leg, with just the right balance of lean meat and fat for flavour.

Simply cured, lightly seasoned, then sewn into a casing and left to air dry slowly the traditional way. Nothing rushed β€” just time and good ingredients doing their work.

Made by hand at The Organic Cure here at Haye Farm in East Devon, using high-welfare pigs raised on organic pasture.

Clean, delicate, and full of natural flavour.
