Braised Lamb Shanks Recipe

Our Organic Lamb Shanks from Haye Farm offer great value and incredible flavour. Here's a recipe to get the best from them (Serves Two)

Ingredients:

  • 800g Organic Lamb Shanks
  • Sprigs of fresh thyme, parsley and rosemary.
  • Mixed root vegetables chopped (carrot, swede turnip and onion or any you fancy)
  • 1 Stalk Celery Finely Chopped
  • 2 Cloves Garlic Chopped or Minced
  • 750 Ml Red Wine
  • 500 Ml Beef Stock2 Tbsp Olive Oil
  • 4 Tbsp Tomato Puree
  • Seasoning to taste

Method:

  • Using a medium casserole dish on your oven top, season and brown the lamb shanks all over in half of the olive oil and set aside. 
  • Add the remaining oil and gently brown the vegetables and celery  adding the garlic once they are starting to brown. 
  • Use half of the red wine to deglaze the pan and reduce until about half has evaporated. 
  • Add the tomato puree and stir in well then add the stock, herbs and the lamb shanks and the remaining wine, stir, and lid the casserole
  • Cook in a preheated oven on 160 degrees fan for two and a half hours, checking and stirring halfway through. If the sauce is evaporating too much just add some water.
