Chicken Baked CousCous
One of our favourite super fast and simple midweek suppers...
Serves 4
Ingredients:
400g couscous
6 crushed garlic cloves
Tsp crushed dried chilli
4 x pinch cinnamon
4 tbsp olive oil
4 tsp curry powder
Handful sultanas
Butter
Mint leave
Method:
Mix all the spices and garlic with the olive oil in a jug, dice the chicken breasts and put in a medium flat rectangle casserole dish. Pour the oil and spices over the chicken and stir. In a separate dish put the couscous and 400ml of water together and stir and mix in the sultanas to taste. Dot the couscous mix with knobs of butter and cover the dish with foil. Heat the oven to 180 degrees fan and place the chicken in the oven. After 5 minutes place the couscous dish in the oven as well.
After a further 15 minutes cooking remove the dishes and combine, dot with more butter and bake for a further 5 minutes without foil.
Serve with a crispy green salad with red onions and honey & mustard dressing....
