40–45 minutes
Ingredients
-
2 lemons (zest of 1, juice of both)
-
4 garlic cloves, crushed
-
3 tbsp olive oil
-
2 tsp dried oregano
-
1 tsp smoked paprika
-
1 tsp sea salt
-
½ tsp freshly ground black pepper
-
2 tbsp fresh parsley, chopped
Optional: A pinch of chilli flakes or 1 tsp of honey for a little extra warmth and sweetness.
Method
1. Make the marinade. In a large bowl, combine the lemon zest and juice, crushed garlic, olive oil, oregano, smoked paprika, salt and black pepper.
2. Marinate the chicken. Add the drumsticks and toss thoroughly until coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavour.
3. Prepare the oven. Preheat to 200°C (180°C fan) or Gas Mark 6. Arrange the drumsticks in a single layer in a roasting tray, pouring over any remaining marinade.
4. Roast until golden. Cook for 40–45 minutes, turning halfway through. The chicken should be beautifully browned, with crisp edges and sticky, caramelised juices. If the drumsticks are particularly large, they may need a little longer.
5. Finish and serve. Sprinkle with freshly chopped parsley and serve with roasted potatoes, seasonal vegetables or a crisp green salad. Add extra lemon wedges for squeezing over the chicken.
