Our free range Christmas geese are available for pre-order now for those that want something different to the traditional Turkey.The free range geese are reared by Otter Valley Poultry from early April through to November on their farm hidden away in the Blackdown Hills of East Devon. They start life as day old goslings and are reared under heat for the first couple of weeks as they can not regulate their own body heat very well. Once they have adapted to the ambient April temperatures they are allowed out into the paddock little bit at a time so they don’t stray to far, at such a young age s they are little targets for predators. At about 6 weeks of age they have lost most of their green/yellow fluff and are feathering up nice and white they are much bigger now and can forage further afield. The geese have open access to grass and water everyday, in-fact once they are let out in the morning they rarely return to the shed until its time to put them away for the night for safety.
The reason for selling the geese frozen is because Otter Valley has so much poultry to prepare in December in such a short space of time to keep everything fresh has become really hard work. Last year was the first year we decided to process the geese in. November, they are dry plucked and waxed to remove all the feather and down leaving a beautiful clean finish. The geese are hung long leg for 10 days to mature allowing the fat to set really hard and the meat to relax giving incredible taste and texture. After the hanging the geese are dressed ready for the oven the giblets and fat are saved and vacuum packed and placed back in the goose, it is hung in the fridge overnight and then immediately bagged and frozen. By following this process there is no loss of quality, taste or texture. The geese will be sold frozen and can start to defrost on their way to you, all you will have to do is place in your fridge until Xmas day for cooking.
