Our Tomahawk is an on-the-bone rib-eye, cut from one of the five fore ribs with the cap removed. Generous meat runs along the bone, showcasing the rib-eye in all its glory. Dry-aged for 30 days to intensify flavour and tenderness, this impressive cut is perfect for the reverse sear technique: slow in the oven at 100°C for 30 minutes to soften the meat and fat evenly, then sear to your preferred finish for a spectacular, flavour-packed steak.
