Our organic double cannon of lamb is one of the most refined cuts you can serve — beautifully tender, naturally lean and perfect for special occasions or an impressive weekend roast.
Raised on pasture at Haye Farm in Devon and on our trusted partner farms, our lambs graze slowly outdoors on organic grass pasture. This natural, high-welfare approach produces lamb that is clean in flavour, incredibly tender and naturally succulent.
Carefully prepared by our butchers, the double cannon is taken from the prized loin of the lamb, with two trimmed cannon loins left together to create a generous and elegant roasting cut. The delicate marbling and fine texture help the meat stay beautifully juicy while cooking quickly and evenly.
Simply sear in a hot pan to create a golden crust, then roast gently until perfectly pink. Slice thickly and serve with buttery new potatoes, seasonal greens and a rich red wine or rosemary jus.
