How to Confit Duck Gizzards
A classic French salad is Salade du Gesiers which uses duck or chicken gizzards. We are now offering organic duck gizzards so here is how you confit the gizzards before you use them in a salad. Once 'confited' you can keep them in the fridge for up to two weeks.
Ingredients:
- 500g organic duck gizzards
- 500g duck fat
- 1 handful coarse salt
- 3 garlic cloves
- 2 Bay Leaves
- 1 Tbsp Fresh Thyme
Method:
- Place the Gizzards and the salt in a bowl and refrigerate for 12 hours
- Rinse tha salt off, heat the fat in a large pan, add the gizzards and the garlic thyme and bay (preferably in a pouch) and simmer for one hour.
- Once cooked cover with greaseproof paper and store in the fridge until eating.
- When eating fry the gizzards for 4-5 minutes in a pan and add to a fresh salad with a vinaigrette dressing
