Joe Wicks Thai Chicken Lettuce Wraps

Our Free Range and Organic Chicken mince is ideal for making this lean meal which is also packed full of Thai flavours! Can also be made with Turkey mince if we have any stock following Christmas! Serves 2

Ingredients

• 1 x Springfield Organic or Free Range Chicken Mince
• 3 teaspoons Light Soy Sauce
• Zest and Juice of 1 Lime
• 1 teaspoon Sesame Oil
• 1/2 teaspoon Brown Sugar
• 2 teaspoons Sesame Seeds
• 3 teaspoons Coconut Oil
• 2 tablespoons/20 grams Thai Red Curry Paste
• 1 x Large Carrot (Peeled and finely chopped)
• 1 x Small Red Onion (Peeled and finely diced)
• Small bunch of Mint (Chopped)
• Small bunch of Coriander (Chopped)
• 1 Large or 2 Small Baby Gem Lettuces (Separated)
